Duck Saute Over Cavatappi Pasta

4 Ducks Breast

Skinless, boneless

2 tablespoons Butter  
1/4 Shallots Chopped
2 tps Garlic Chopped
1 lb Granny Smith Apples Skinned, thick sliced
1/4 Cup Apple Jack Brandy  
2 Cups Heavy Cream  
1/2 Cup Parmesan cheese  
2 tablespoons Butter Clarified
  Salt & Pepper To taste

Place duck breast between plastic wrap and pound out to even thickness. Salt and pepper breast and saute in clarified butter for 2-3 minutes on each side or to desired doneness and hold in a warm oven. Add butter, apples, shallot, garlic and saute' for 2 minutes. De-glaze the pan with apple jack, add cream bring to simmer, adjust flavor with salt and peper, toss with pasta. Slice duck breast, and place on pasta, garnish with Parmean cheese.
