Craw Fish Sauté with Roasted Red Peppers

2 tablespoons Butter

 

1 LB Crawfish Tail meat  
1 tablespoon Roasted garlic Mashed
1/2 cup Yellow squash Sliced
1/2 cup Bell peppers(red,green,yellow) Wedge cut
1/2 cup Red Onions Wedge cut
1/8 cup Cilantro(fresh) Chopped
1/2 cup Tomatillos Pureed
1/4 cup Prosciutto ham Chopped
1/4 cup Green onions Sliced
2 tablespoons

Roasted Red Pepper sauce

 
1 tablespoons Chipolte peppers Pureed
1/4 cup White wine  
1/2 cup Chicken stock  
  Salt & Pepper To taste
1 LB Cooked pasta  
  Parmesan cheese To garnish

Over high heat sauté butter, crawfish, roasted garlic, squash, bell peppers, red onions and proscuitto ham and cook for 3 minutes. De-glaze with whited wine, chicken stock, add tomatillos puree, roasted Read Pepper Sauce, chipolte pepper puree and bring to a simmer. Add the green onion's and season to taste. Serve over cooked pasta and top with Parmesan cheese.
