Caribou In Dijon Cream

2 lbs Caribou Steaks  
2 tablespoons Butter Clarified
2 tsps Garlic Chopped
2 cups Leeks Julienne sliced
1 cup Mushrooms Sliced
1/4 cup White wine  
1 cup Heavy cream  
2 tablespoons Dijon mustard  
2 tablespoons

Basil

Sliced
2 tsps

Tarragon

Chopped
1 tsp Rosemary Chopped
  Salt and Pepper To taste
4 Puff pastry sheets 4" square egg wash

Brush puff pastry sheets with an egg wash,(egg and water) and bake in 350 degree F oven for 15 minutes, they will puff up and should be golden brown. Cut the caribou steaks into 1/2 inch strips, season with salt and pepper. On high heat in clarified butter, sauté caribou strips for 2 minutes, add garlic, mushrooms and leeks continue cooking for another 3 minutes. De-glaze with white wine add cream, mustard, honey,herbs, bring to a simmer and season to taste with salt and pepper. To server take the top off the puff pastry, ladle in sauce and place top back over at an angle.
