Au Gratin Potatoes with Ham
Wash and thinly slice the potatoes into large potato chips. Store in cold water. In a 20" x 12" hotel pan or 2, 10" x 12" cake pans, place an overlapping layer of potatoes, toweled dry, 4 ozs gruyere cheese, 2 ozs Parmesan cheese, 3 ozs ham, 4 ozs heavy cream, nutmeg and white pepper. Repeat the process making about 4 layers. Bake covered at 400 degrees F. for 1 hour. Uncover and bake at 350 degrees F for 1/2 hour. Set aside for 10 minutes. Slice into desired shape and serve. Serves:16 portions |
