Herb Buttermilk Biscuits
In a bowl Mix flour, baking powder, baking soda, salt and sugar. Cut in chilled butter until the mixture resembles cornmeal. Add buttermilk,thyme and peppercorns. Stir until the dough comes together and stop. Do not over mix. Pour the dough on a floured board and dust the top with flour, fold the dough over on itself 4 or 5 times and level to one inch thick. Cut your biscuits with a 2 inch cutter pressing straight down or the biscuits will not raise properly. Place the biscuit's on a baking sheet so they just touch. Bake at 400 degrees F for 15 minutes, turn the pan and back another 12 minutes. The reason we turn the pan is our oven does not bake evenly. Yield: 8 biscuits |
